These are so amazing! Some of the best muffins I have ever eaten. I have a middle earth cookbook and was disappointed that their recipe called for bananas and the twice baked was for biscotti. These are so amazing for when you have high quality honey and just want that flavor to come through

Extremely light in honey flavor and felt quite grainy. Almost like a cornbread. We didn’t like this at all.

these are the perfect treat to go with a cup of tea! for anyone wondering what size bottle of honey to get, i used a whole 12 oz (by weight) bottle for this recipe. just remember to measure by fl oz– meaning if you get 12 oz by weight, the 6 FLUID oz (3/4 cup) of honey doesn’t mean half of the bottle. it’s actually most of the bottle. i almost made that mistake and i’m glad i didn’t! i also didn’t add vanilla (i’d already started the recipe when i realized i didn’t have any) and they still turned out delicious. i’m excited to try these with orange zest, too, as a previous reviewer commented. i think these would be a good base if you want to experiment with other spices, too. a little cardamom, maybe? already thinking about my next batch!

Hi Kelly! Absolutely you could make them in a mini muffin pan! Keep your eye on them, they will probably only need about half the baking time. Let me know how it goes!
