Hi Lisa! The leftover syrup can be used as a lemon flavored simple syrup – you can sweeten tea or cocktails with it! It will last for a while in your fridge!

Candied lemons were way easier to make than I thought and I’d never had them before so that was a nice treat. The lemon cake is great soft and moist. 4 stars for a good recipe but I did not give 5 because there was way too much leftover batter, the recipe definitely needs to be adjusted I know I’m not the only one that had this issue
