Hi Leonore! This is one of those recipes that definitely has a blurred definition. A lot of times the two names are used interchangeably (especially in restaurants). Both chilaquiles and migas use the same basic ingredients (cheese, onions, tomatoes, eggs, and tortillas/chips). Migas generally involve the chips being crushed and scrambled into the mix, while chilaquiles tend to have their chips soaked in the salsa/sauce and then fried before being topped with all the goodies. The flavors are very similar, but have slightly different textures because of the cooking methods – migas are a little softer! I hope this helps!

I love this recipe, but in my life it is called Chilaquiles. Is this just the difference between Tex-Mex and authentic Mexican? I thought Migas was made with stale bread cubes.

I would never think that eggs and refried beans would go together, but they really do! This recipe is such a great way to have breakfast any time of day. I’ve never made it at home before, but I’m thinking this will be perfect for a lazy summer weekend morning

I am guilty of making the same thing for breakfast every single day. This is just the recipe I need to switch up my mornings. I love how you broke it down for the age limits for how the kids can help. This is a great recipe to start teaching the kids how to cook! I’m so all over this one and can’t wait to make it!!!
